Chocolate mousse with whipped cream and passion fruit

Ingredients:
  • 600 g cooking chocolate
  • 6 cl Cointreau
  • 3 bananas
  • 5-6 tablespoons sugar
  • 600 g whipped cream
  • 12 separate eggs
  • a little orange juice
  • 24 Passion fruit
  • 6 tablespoons cold espresso

Preparation:

Begin by beating the egg whites until foamy, then beat the cream until stiff.

Next, melt the chocolate in a hot water bath. In the meantime, beat the egg yolks and sugar until foamy, then add to the warm chocolate. Add the Cointreau, the cream and the espresso, then stir thoroughly.

Next blend in the egg whites with caution. While you are preparing, the cream put 12 glasses in the fridge so that they are cold.

Now fill those glasses with the mousse and put them back into the fridge.

For the passion fruit sauce:

For the sauce, cut the fruit in half, then scoop out the inside. If needed you can add a little sugar and orange juice, then stir well.

Before serving put the passion fruit on top of the mousse and garnish with a banana slice.
