Cocos baking dough filled with pineapple

Ingredients:
  • For the dough
  • 375 ml coconut milk
  • 6 eggs
  • 450 g flour
  • 90 g sugar
  • 3 cl beer
  • 3 tsp vanilla sugar
  • 1 tsp salt
  • For frying fat for frying
  • For the filling:
  • 3 pineapple or 3 cans of pineapple slices

Preparation:

First, peel and wash the pineapple, then cut into 1 cm slices.

Separate the eggs. Blend the egg white and sugar meringue, then beat well. The remaining ingredients, the beer, the vanilla sugar, the flour and the coconut milk place into a bowl and blend well. When this is done add the stiff egg white.

Stick the pineapple pieces on a wooden skewer then dip into the cream you just made and bake until golden brown.

After frying put the skewers on a paper towel to drain the excess fat. As an extra treat, you could sprinkle the pineapples with grated coconut. You can serve it with a scoop of vanilla ice cream if served in summer.
