Lemon cream

Ingredients:
  • 9 eggs
  • 12 tablespoons sugar
  • 9 sheets of gelatine
  • 2 cups cream
  • 3 lemons
  • 12 tablespoons water

Preparation:

Soak the gelatine in cold water and prepare according to package directions. Separate the eggs. Grate the lemons. Stir the egg yolks and stir until smooth. Stir in grated lemons skin and juice. Heat water and dissolve the gelatine in it. Pour the gelatine into the lemon-egg cream and refrigerate until it starts to get hard. This can vary. Depending on the water temperature up to ½ hours or more. Whip the cream with a little vanilla sugar until still. Do the same with the egg yolk, however, add a pinch of salt. Gently mix it all together and put into the fridge until you serve it. Either put the cream into individual cups or small bowl. Or serve it a big bowl where everybody can help themselves. If you like, you can decorate the cream with whipped cream.
