Potato salad with vegetables

Ingredients:
  • 2000g potatoes
  • 1000g carrots (carrots)
  • 500g celeriac
  • 500g Parsley
  • Fresh parsley to taste
  • 2 Jars of pickles
  • 2 apples
  • 200g red or white onions
  • 200g remoulade or mayonnaise
  • 400g yoghurt (also sour cream or sour cream available)
  • 2 tablespoons medium mustard
  • Salt
  • Pepper
  • Sugar

Preparation:

Cook the potato, carrot, celery and parsley. Then chill all ingredients. Peel and cut the potatoes into slices. Do the same with the carrots, celery and parsley. Depending on your taste, you can also add 1 tin of peas. 2-3 hard boiled eggs are also a possibility. Put all cut ingredients into a bowl and sprinkle the finely cut parsley on top. Mix the remoulade, mustard, yoghurt, salt, pepper and sugar together. Put everything on the remaining salad ingredients and mix well. Deglaze with some cucumber water if necessary, so the salad is not too dry. The salad can be the main meal; however, it also goes well with cook sausages or meat loaf.
