In a large pot bring the milk to boil. Stir in the egg yolk mass and sift in the semolina. Stir constantly. This will prevent it from burning. Take the pot off the stove. The egg whites from the refrigerator, then add it to the pudding. This semolina pudding goes well with various fruit such as cherries as well as with applesauce. The longer the semolina pudding can swell, the better it tastes.
