Cheese and leek soup Hack

Category: Dinner
Difficulty/Costs: simple/low
Number of people: 12
Ingredients:
  • 750g minced meat
  • 3 eggs
  • 3 small onions
  • 60g butter
  • 9 leeks (leek)
  • 600g herb cheese
  • 600g cream cheese
  • The 1.5 TL basil, thyme
  • 3 small cans mushrooms
  • 3 small canned corn
  • 3 cups whipping cream
  • 1.5 tsp instant bouillon
  • Some breadcrumbs

Preparation:

Peel the onion and dice finely. Wash leeks and cut into thin rings. Mix the mixed beef with eggs, breadcrumbs and salt and knead properly. From the mince shape walnut-sized balls and cook them in a sufficiently large pot of salted water. Keep the mince balls warm and keep the water. Melt the butter in a saucepan and fry the leek rings. Then add some of the cooking water and cook for 10 more minutes. Slowly add the cheese. Add herbs and stir gently. Lastly, add the mushrooms. Then add 100 ml of the cooking water and the cream. Add broth and cook for another 10 minutes. Next, put the meatball to it and cook for another 2 minutes. If the soup is too thick, you can easily dilute it with water. If it is too liquid, it can be thickened with cornflour. Serve with fresh bread.
