Cauliflower and potatoes in mustard sauce with sausages

Ingredients:
  • 3 cauliflowers, best fresh
  • 3 kg potatoes
  • 375 ml instant meat broth
  • 90 g margarine or butter
  • 8-9 tablespoons grainy mustard
  • 6 egg yolks
  • 60 g flour
  • 24 sausages
  • 375 ml cream
  • 3 bunch of parsley
  • 3 bunch of chives
  • Pepper salt
  • 3 pinches of sugar

Preparation:

First, wash the cauliflowers, then cut them into rosettes and cook the for about 20 minutes in salted water. Make sure the rosettes are not getting too soft. When finished remove the cauliflower from the pot but keep the water.

In the meantime, put some fat into a pan and heat it ap. Gently stir in the flour and keep stirring. The add ¾ of the cooking water to the flour as well as the cream. Cook this broth for 10 minutes while constantly stirring it. Flavour it with sugar, mustard, pepper and salt.

Now add the yolks to the sauce and mix well. Put the cauliflower rosettes on a plate and cover them with the sauce. Cut chives and parsley and garnish the meal.

This dish goes exceptional well with sausages und potatoes.
