Leek Tarte

Ingredients:
  • 900 g flour
  • 375g creme fraiche
  • 375 g sour cream
  • mixed 600 g grated cheese, Emmentaler and Gouda
  • 60 g yeast
  • 3 medium leeks
  • 3 tsp salt
  • 3 onions
  • 3 cups lukewarm water
  • Nutmeg, pepper, salt

Preparation:

Put the flour into a large bowl and make a little hole in the middle. In there goes the yeast and half of the water. Add also a little salt and knead to a smooth dough. Make sure all the yeast has dissolved. Knead the dough until it does not stick to your hands any longer. Cover and leave to rest in a warm place for 3 hours.

After this time, remove the dough from the bowl and roll it out. Make sure that always only one piece fits on the baking sheet. Mix sour cream and creme fraiche, season with nutmeg, salt and pepper; then spread it evenly on the dough.

Wash leeks, and onions and cut them into rings, mix both together and spread on the dough. Sprinkle a little bit of cheese on top.

Preheat oven to 220 ° C and bake until golden brown.
