Cheese noodles

Ingredients:
  • 1,500 g flour
  • 3 tablespoons oil
  • 750 ml water
  • 12 teaspoon salt
  • 9 medium onions
  • 18 fresh eggs
  • 900 g grated Emmental

Preparation:

To prepare the dough for the cheese noodles, sift the flour into a large bowl. Add the eggs, oil and salt, then stir with a hand mixer or food processor. Depending on how big the eggs are, add water to the dough until it becomes viscous. While preparing the dough, bring a large pot of salt water to boil. Then put the dough on a tablespoon or put it through a noodle press and add it all to the boiling water. When the noodles are cooked, they automatically come to the surface. Remove them from the water and put them into a bowl. To the hot pasta add portions of cheese. This will give you a good mixing ratio. While cooking, the noodles make sure there is always sufficient salt in the water. The pasta will absorb this. When all noodles are cooked, cut the onions into rings, fry them until they are light brown; then add them to the noodles. Stir the noodles well and make sure they don’t stick to the bottom of the pan.
