Burrida Genovese

Number of people: 12
Ingredients:
  • 1200 g of fish fillet of monkfish, hake
  • 9 onions
  • 6 cloves of garlic
  • scampi
  • 1 ½ bunch parsley
  • 3 glasses of white wine
  • 6 tomatoes
  • 3 teaspoon oregano
  • 9 tablespoons olive oil
  • Sea salt and black pepper

Preparation:

Cut the tomatoes and onions into very thin slices. Chop the garlic finely.

In a pan heat up a little olive oil then add the onions, chopped garlic and sliced tomatoes.

Then season the scampi and fish fillets with salt and pepper and add them to the pan.

Now cut the parsley and oregano and add it as well. Season again.

Add white wine and the remaining olive oil.

Simmer over low heat for about 10 minutes.
