Beef in red wine sauce

Ingredients:
  • 3kg beef
  • 300g smoked bacon
  • 15 large onions
  • 18 juniper berries
  • 6 bay leaves
  • plenty of parsley
  • 3 bottles of red wine (the alcohol evaporates, it remains the taste)
  • Salt
  • Pepper

Preparation:

Clean and peel the onions and cut into small crescents. Wash the meat and dry thoroughly. Remove all grease and possible impurities. Then cut into 2 x 2-centimetre cubes. Cut the bacon into small pieces and fry it shortly. Add the onion to the bacon and fry until golden. Remove onions and bacon from the pan. Fry the meat in small portions in the pan. When the meat is done, add the onions and bacon, season with spices and pour over the wine. Let it all boil for about 1 - 1.5 hours. While cooking, the alcohol evaporates and only leaves its taste. Add some parsley and cook for another 1 - 1.5 hours. Serve with rice or noodles.
