Kohlrabi soup with mince balls

Ingredients:
  • 3 kohlrabi
  • 18 medium potatoes
  • 6 carrots
  • 3-liter vegetable
  • 1 cup sour cream
  • 750g minced beef
  • 3 bunch of parsley
  • ¾ pot chives
  • Salt
  • Pepper
  • Nutmeg

Preparation:

Peel the potatoes and kohlrabi. Cut the Kohlrabi first into slices and then into sticks. Dice the potatoes. Heat up the vegetable broth. Add the cut potatoes and kohlrabi and cook for about 15 minutes. During this time peel and cut the carrots into sticks. Carrots in a separate pot until al dente in salted water. Cook the carrots separately in some salted water. Season the mince with salt, pepper, chives and parsley. Shape into bite size balls and fry. Remove the pot with the broth from the stove. Remove half of the vegetables and put aside. Puree the rest of the veggies until frothy. Season with salt, pepper, sour cream and nutmeg. Then add the carrots, kohlrabi potatoes and mince balls. Heat it again and serve sprinkled with parsley.
