Nasi Goreng Vegetarian

Ingredients:
  • 375g basmati rice
  • 6 zucchini
  • 6 tbsp. Ketjap Manis
  • 6 carrots
  • 6 tsp Sambal Olek
  • 6 cloves of garlic
  • 600 g onion
  • 6 eggs
  • 3 red peppers
  • 90 g ginger
  • 3 leeks
  • 15 tablespoons peanut oil
  • Pepper salt

Preparation:

Cook the rice according to the instructions on the package, then set aside.

Wash all the veggies, then cut them into equal sized pieces. Peel and chop the onions and garlic finely.

Whisk together the Sambal Olek, Ketjap Manis and the eggs.

In a pan heat up t tbsp. of oil. First put in the ginger, then the chopped garlic and fry for 2- 3 minutes. Then add the onions, carrots, leek and red pepper and fry for another 2 minutes. At the end add the zucchini.

Heat the remaining oil in a spate frying pan and fry the rice. Then add the veggies, sprinkle with the egg mixture, season with salt and pepper and serve hot.
