Turkish shepherd salad - Coban salatasi

Ingredients:
  • 6 large outdoor tomatoes
  • 3 Roman lettuces small
  • 3x the juice of lemons
  • 3 bunch of parsley
  • 3 bunch scallions
  • 12 mild or hot peppers
  • 6 small, firm cucumbers gardener
  • 9 tablespoons of extra virgin olive oil
  • Pepper salt To garnish:
  • 150 g feta cheese
  • 150 g black olives

Preparation:

In almost all the southern countries the salad is very popular as a starter, and in Turkey, it is not any different.

Start by removing the outer leaves from the romaine lettuce, then remove the stem. Carefully wash the tender leaves, then drip dry them.

Next cut the leaves into strips and put them into a large bowl. Wash the tomatoes well, remove the stem, cut and add them to the lettuce.

Now peel the cucumber, cut them into cubes and add as well.

Remove the stems from the pepperoni as well, cut them in half. Remove the seeds carefully, wash, then cut into strips and add to the salad.

Wash the parsley and drip dry, then chop coarsely. Add them to the to the salad as well.

Squeeze 3 lemons, then mix the juice with the oil, the salt and pepper to a marinade. Pour it over the salad, then season again if needed.

Put the well-mixed salad on a large plate and garnish with olives and finely grated feta cheese.
