Chicken Parmesan Cordon Bleu

Ingredients:
  • 12 slices of Emmental
  • 12 chicken breasts
  • 12 slices of cooked ham
  • beaten 6 eggs with a little water
  • 3 teaspoon oregano
  • 9 tablespoons freshly grated Parmesan cheese
  • 4.5 cups of fine breadcrumbs
  • 3 tablespoons olive oil
  • 3 tsp basil
  • Pepper salt

Preparation:

First remove the skin from the chicken breast, then flatten the chicken with a meat hammer until it is just 1cm thick. Season with pepper and salt.

Put the spices, breadcrumbs and the Parmesan in a small bowl or a small dish and mix well. Then beat the 6 eggs with a little water and put them into another bowl.

Now take the baking tray out of the oven and preheat to 175 ° C. sprinkle the tray with olive oil.

Cut the chicken breasts in the middle and fill it with a strip of cheese and ham. Then close the cut, similar to an envelope. To make sure the pockets do not open you can use a toothpick.

Now, each chicken breast goes into a breadcrumb spice mixture, then back into the egg mixture and back into the breadcrumbs. When this is done, place your Cordon Bleus on the baking tray and cook for 40 minutes.

Then turn off the oven but let the chicken rest in there for another 10 minutes. That will keep the meat juice inside.
