Shredded Duck

Ingredients:
  • 12 duck breasts 200 per piece
  • 12 spring onions
  • 12 cloves garlic
  • 6 red chillies
  • 6 green peppers
  • 6 red peppers
  • 12 tablespoons oil
  • 12-18 tsp sugar
  • 50 ml water
  • 50 ml soy sauce
  • chopped 6 tablespoons coriander
  • chopped 6 tablespoons peanuts
  • chopped 6 tablespoons basil
  • Pepper salt
  • Flour to turn to

Preparation:

Remove all the skin and tendons from the duck breast. Cut into fine strips and turn the meat in a little flour.

Then remove the seeds from the chilli and chop it finely. Peel the garlic and chop into large pieces.

Quarter the green and red peppers, remove the seeds, then cut into thin strips. Now cut the spring onions into fine rings.

Meanwhile, heat up some oil. Season the meat with salt and pepper, then fry the duck breasts briefly on both sided. Remove from the pan. Now put all the finely cut veggies into the pan and fry by constantly stirring it for 3 minutes. Add the sugar, the water and the soy sauce.

Put the meat back into the pan, add the peanuts, cilantro and basil and fry until finished.
