Leek soup

Number of people: 12
Ingredients:
  • 12 leeks
  • 450 ml cream,
  • Margarine or butter
  • 3 l broth
  • 3 medium sized potatoes
  • Pepper, nutmeg, salt

Preparation:

First, clean the leek and cut it into rings. Put a few rings aside. Peel the potatoes and cut into 1cm cubes.

Put the butter or margarine into a large saucepan and melt. Add the leeks and sauté. 5 minutes later add the potatoes and leeks.

Next, add the broth and allow to cook over low heat for 30 minutes. Stir now and then. As soon as the potatoes and leeks are soft, put them into a blender and puree until it is smooth.

Now season with nutmeg, salt and pepper; however, be careful with the salt; the broth in itself is already salty.

At the very last you add the cream. Sprinkle with the remaining leek rings and serve hot.
