Baked Santa Claus

To bake a Santa Claus we will need the following ingredients: 2 Eggs, 200g Sugar, 1 Lemon peel (grated), 2 teaspoons of rum, 1 pinch cinnamon, 175g ground Almonds, 200g flour (wheat flour type 405), and for perfect icing: 150g icing sugar and 1 teaspoon rum, a bowl, spoon, mixer, baking paper and tray. Firstly, beat the eggs and sugar until frothy, then add the lemon peel, teaspoon of rum, cinnamon and ground almonds. Mix well and add the flour, kneading into dough. Leave the dough to rest for an hour – to do this press flat and place in the fridge. Once cooled roll the dough out until you have a layer that is approx. 4-5mm thick. Mould the Santa Claus from this layer or use a shape cutter. Bake the Santa Claus in a preheated oven at 200 degrees Celsius (top/bottom heat) for 10-12 minutes. Once cooled cover with icing made of icing sugar and rum.
