Apple pancakes

Ingredients:
  • 625g flour
  • 750ml milk
  • 10 egg yolks
  • 50g fresh yeast
  • 1.5 tsp cinnamon
  • 7.5 tablespoons sugar
  • 10 protein
  • 10 apples
  • Butter for baking

Preparation:

Take the flour, milk, egg yolks, crumbled yeast, 2 tablespoons sugar and the cinnamon and knead it to a dough. If you like, you can crumble the yeast in the milk and dissolve it that way. However, making sure that the milk is lukewarm, not hot. Let the dough rest for about 30 minutes. As soon as the dough has rested beat the egg white and 1 tbsp. until stiff and gently put it in the dough. Peel the apples and remove the seeds. Then cut crosswise into slices. Heat butter or fat in a non-stick pan. Add 2 tablespoons of batter into the hot butter and top with 1 to 2 slices of apple. Once the pancakes are brown on the bottom, turn them over. Serve for breakfast with sprinkled sugar and cinnamon.
