Buttermilk Quark Bread

Ingredients:
  • 250g light quark
  • 10 tablespoons buttermilk
  • 9 tablespoons oil
  • 75g sugar
  • 1 pack. Vanilla sugar
  • ½ lemon skin
  • 1 pinch of salt
  • 450g flour
  • 1 ½ pack baking powder
  • 30g flaked almonds
  • 1 egg yolk
  • Flour for the work surface

Preparation:

Mix the quark, oil, 9 tablespoons buttermilk, sugar, vanilla sugar, salt and lemon together. Then mix flour and baking powder and sift it in. Stir with a beater of a hand mixer. Sprinkle the work surface with flour, place the dough on it and divide it into quarters. Roll the dough out to about 40cm long pieces. Now braid the dough pieces. For this place the respective outer pieces over the middle. Repeat until the dough is braided. Squeeze the dough ends well and turn the end underneath. Cover the baking sheet with baking paper and place the braid on it. Bake at 200 ° C for 15 to 20 minutes. Mix the egg yolks with salt and 1 tablespoon buttermilk. Brush this on the braid and sprinkle it with almond flakes. Bake for another 15 minutes. If there is a risk of allergies, do not use almonds.
