Dominoes

Ingredients:
  • 450 g flour
  • 3 egg yolks
  • 375 g of honey
  • 900 g of red jelly
  • 105 g sugar
  • 3 tablespoons cinnamon
  • 75g butter
  • 1 ½ cube palm fat
  • 1,200 g couverture bittersweet
  • 600 g marzipan
  • 3 tsp mixed spice
  • 120 g brown sugar, rock sugar
  • Gelatine or agar-agar when necessary
  • Icing sugar for kneading
  • chili powder
  • Chopped chillies for decoration
  • red peppercorns for decoration

Preparation:

In a water bath melt sugar, honey and butter. Then add the egg yolks, candy, spices and flour into the dough. Allow resting for 12 hours.

Next, stir the gelatin until soft, if needed, add more gelatin. When done add a little bit of chili powder.

Now, use the icing sugar to knead the marzipan, then roll out.

Cover a baking sheet with parchment paper and roll the dough out on it. Put a baking mould on the outside so that the dough cannot escape when baking.

Preheat the oven to 190 ° C and bake for 5 minutes, remove from the oven and turn the temperature down to 150 ° C.

Now put the rolled-out marzipan on another sheet, put the jelly on top and bake for 15 minutes. Then remove again. Let it all cool down, then cut into squares of 2x2 cm. Always put one part on top of the other.

Now melt the chocolate in palm oil and dip your cookies in it on one side. While the chocolate topping is not fully set, you can sprinkle with chilly and red pepper grains.
