Fast Cauliflower Salad

Ingredients:
  • 3 large heads cauliflower
  • 3 onions
  • 2 tsp sugar
  • 5 tablespoons oil
  • 5 tablespoons vinegar
  • Salt, white pepper
  • Dill fresh or dried

Preparation:

Clean, wash and cut the cauliflower into small florets. Then cook in a large pot with salt water and a little vinegar until soft. Drain but keep the water. Put the cauliflower in a large bowl and let cool down. In the meantime, peel the onions and add small cubes, to the cauliflower. Now put the cooking water to the cauliflower. Pour as much water to the cauliflower so that it is almost covered. Then wash the dill and chop. Mix with oil, vinegar and sugar. Add it to the cauliflower in the bowl and gently stir, so the cauliflower does not fall apart. If needed, season with salt and pepper and refrigerate for 2 hours. This salad goes well with all grilled dishes or just by itself with a slice of bread. If you do not like dill replace it with any other suitable herb. The salad is prepared quickly but needs quite some time to rest. Make sure you start early enough. Suitable even for inexperienced cooks. This also tastes also very good with broccoli.
