Herring salad

Ingredients:
  • 9 packs Matjes in oil
  • 9 medium onions
  • 3 glasses midsize gherkins
  • 12 eggs
  • 3 cup sour cream
  • 9 cups sour cream
  • Pepper to taste

Preparation:

The Herring salad is best prepared the night before so that it can rest overnight. After you started to boil the water for the eggs, drain all liquid from the herring. Cut the fish into 2 cm pieces and put into a bowl. Put the eggs into the water and boil them. Peel the onion and cut into cubes. Peel the apples and cut into cubes as well. Peel the eggs and cut into slices or cubes. Do the same with the cucumbers. If you have mixed the cucumbers, fish, eggs and onion together, add the sour cream and again mix everything thoroughly. Season the herring salad with pepper. Salt is not necessary for this salad because the fish is very salty. If you are using fresh herrings, it is important that they are soaked for a while as that will remove most of the salt. The salad is prepared quickly. However, it needs a long time to rest.
