Italian salad

Ingredients:
  • 750g pasta (small pasta)
  • 600g mozzarella
  • 450g dried tomatoes in oil
  • 500g arugula
  • 500g cooked ham
  • 150g pine nuts
  • 3 cloves garlic
  • Salt pepper
  • 210ml oil
  • 9 tablespoons balsamic
  • 3 tsp basil pesto
  • 3 tsp mustard
  • A bit of honey
  • Freshly grated Parmesan

Preparation:

Cook the pasta in salted water until soft, drain and rinse with cold water. In a small pan sauté the pine nuts without fat over medium heat. Clean, wash and pluck small arugula. Drain the dried tomatoes and mozzarella, then dice. Cut the cooked ham into cubes. Put all ingredients in a large bowl, add salt and pepper - mix everything well. For the dressing, mix the liquid of all ingredients together; then season with mustard, oil, vinegar, garlic and pesto. It’s best to put the dressing only just before serving on the salad, so it does not taste too strongly. Mix the salad well and garnish with the Parmesan.
