Citrus chilli mayonnaise with Brazilian sirloin

Ingredients:

For the roast beef:

  • 3 kg of roast beef
  • 6 oranges
  • ¾ teaspoon ground cinnamon
  • 9 limes
  • 2-3 pinches of black, strong pepper
  • ¾ teaspoon ground cumin
  • 15 cloves garlic
  • 1 ½ tsp salt
  • 75 ml olive oil
  • Pepper and foil

For the Citrus Chilli Mayonnaise:

  • 6 egg yolks
  • 300 ml olive oil
  • Grated fine zest of 1 lemon ½
  • Each 3 strong pinches of salt and chilli powder
  • 1 ½ tsp mustard sharp
  • Depending on your taste still Tabasco, black pepper and salt

Preparation:

First, remove all the fat from the roast beef. Then wash it under cold water and pat dry with a paper towel. Pierce the meat with a fork and rub in the juice of 3 limes.

Wash another 3 limes and grate the skin. Then peel the garlic cloves and crush it. Mix well with the lime skin then add 6 tablespoons olive oil and spices.

Preheat the oven to 180 ° C. Put the remaining oil in a roast pan and heat up. Rub the meat with the paste and put it into the hot oil and fry quickly on both sides.

By now the oven will have the right temperature, put the roast in and fry for about 40 minutes. Turn it regularly.

In the meantime, was the remaining limes with hot water, then cut into fine strips and add to the roast. Next, peel the oranges, make sure the white skin is removed as well. Then cut fillets out of the orange.

Remove the finished roast from the oven and wrap in foil and let it sit for another 10 minutes. Then cut the roast with a sharp or electric knife into thin strips and serve on a sufficiently large plate. Garnish with the lime stripes and orange segments and sprinkle with the remaining gravy. To marinate the meat well, it has to go into the fridge for the next 2 hours.

Preparation of the Citrus Chilli Mayonnaise:

Put the sugar, egg yolks and mustard in a bowl and stir well with a hand mixer at the highest level, until the mixture is creamy.

While constantly stirring add the olive oil gradually and continue until a creamy consistency is reached.

This is your mayonnaise. Sprinkle it with lemon rind, chilli powder, pepper and salt. If desired, add some Tabasco.
