Garlic Kassel

Ingredients:
  • 3.6 kg Kassel with bone
  • 750ml vegetable stock
  • 3 small chillies
  • 3 tsp chilli powder
  • 6 garlic cloves
  • 3 tsp coriander seeds
  • 9 EL wine vinegar
  • 9 tablespoons olive oil
  • 15 bay leaves
  • 900 g tomatoes
  • 30 juniper berries
  • Fat for the pan
  • Cayenne pepper, salt

Preparation:

Take about 24 garlic cloves and peel them. Then take the chilli, coriander seeds, 3 bay leaves, garlic and juniper berries and chop them into small pieces. Then blend in vinegar, salt, chilli powder and oil.

Wash the meat under running water, then pat dry with a paper towel. Next, take a baking tray, line it with the remaining bay leaves, take the meat and put it on top with bone pointing down.

Now take the spicy mix you just made and brush it on top of the meat.

Now remove the skin of an entire garlic bulb. Next, take the tomatoes and cut them into cubes, then add the garlic. Put it all on the baking tray and add the broth.

Preheat the oven to 200 ° C and roast the meat for about 75 minutes. Make sure that you cover the meat with foil after 30 minutes of cooking.

When the meat is finished, remove the bone and cut it into slices before serving and put some gravy on top.

This dish goes very well with mashed potatoes.
