Heaven and Earth - in its refined form

Ingredients:

For the heaven:

  • 12 medium apples
  • 225 ml balsamic
  • 90 g butter
  • 300ml white wine
  • 225 ml Port wine red
  • Pepper salt

For the earth:

  • 12 Grützwürste
  • 600ml milk
  • 1500 g potatoes
  • 150g butter
  • 6 tablespoons olive oil
  • Nutmeg fresh, pepper, salt

Preparation:

To prepare the heaven, wash the apples, remove the seed and cut into small cubes.

In a pan melt some butter, then add the apples and simmer a bit. Add the white wine, then season with pepper and salt. Set the temperature to medium heat and let the apples cook in the white wine as for about 10 minutes or until tender.

In another pot cook the port wine and balsamic until it gets syrupy.

For the Earth, wash, peel and cook the potatoes for 20 minutes in salted water.

Take a toothpick and make some holes into the sausages, then fry them in hot oil over medium heat for about 3 – 4 minutes.

Put the mashed potatoes, the apple puree and the sausages on a plate and drizzle a little bit of balsamic on top, then serve.
