Ham noodles

Ingredients:
  • 900g flour
  • 9 eggs
  • Salt
  • 600g lean cooked ham
  • 3 medium onions
  • 3 tablespoons butter
  • 3 tablespoons oil
  • 3 cup sour cream
  • 3 bunch of parsley
  • 6 eggs (separated)
  • Pepper
  • Nutmeg
  • Butter (abundant)
  • Fine flour

Preparation:

Sieve the flour into a bowl. Add the 9 eggs and salt to form a dough. If needed add cold water. Knead the dough for about 10 minutes. Then let it rest for 30 minutes. Best you put an upside-down bowl on it. Then roll out the dough thinly and allow to dry for 10 minutes. Peel the onions and chop finely. Melt butter in a frying pan and fry the onions until soft. Then take off the stove. Cut the dough into 1 x 1cm squares. Then cook them in a salt water with a little oil for about 6 minutes. When done, remove the water. Preheat oven to 200 °. Grease a baking dish. Beat the egg white until stiff. Mix the sour cream with the egg yolk. Add the noodles, ham, onion to the cream, season with salt, pepper and nutmeg, then gently mix in the egg white. Pour everything into the baking dish and sprinkle with breadcrumbs. Put little flakes of butter on top and bake until golden brown.
