Noodles

Ingredients:
  • 1.8 kg peeled potatoes the day before
  • about 300 g flour
  • 6 egg yolks
  • Chopped 3 tbsp. parsley
  • Nutmeg, salt, pepper
  • for frying butter

Preparation:

Mash the peeled potatoes from the day before, then place them into a bowl.

Next add the 6 egg yolks, nutmeg, salt and pepper to the potato and blend it all together.

Add the flour and work it into a smooth dough. Dust your working space with some flour then put the potato dough on it, then form small balls from the dough. And from there turn die balls into noodles. Those noodles should be pointy at each end.

As soon as you have done that, put them into the hot salt water and let them draw for about 3 minutes. Then drain the water away.

Now add a little butter in a pan and heat it up. Place the noodles into it and fry until golden brown.

While you are frying them, season with salt and pepper, then add chopped parsley. That dish is suitable to serve with main dishes such as venison steaks or other meat dishes. However, according to Swabian customs, served with sauerkraut they are a real treat.
