Tortellini gratin

Ingredients:
  • 3 large onions
  • 3 tsp olive oil
  • 1,800 g frozen spinach
  • 1,500 g Tortellini
  • Salt
  • 750 g beef tomatoes
  • 900g mozzarella
  • Pepper
  • Basil
  • 9 tbsp. creme fraiche

Preparation:

Bring a sufficiently large pot of salted water to the boil and cook the tortellini. If you do not have a pot big enough, cook them in smaller portions. When done, put them into a bowl and keep warm. Peel the onions and cut into cubes. Put the olive oil in a saucepan and fry the onions until soft. Add the frozen spinach and pour some water on top. You can use sour crème instead. Wash the tomatoes and remove the stems. Then cut into thin slices. Drain the mozzarella and cut into thick slices. Discard the water from the spinach and season with salt, pepper and basil. Gently mix in the Creme fraiche. Grease a baking dish or casserole and put the spinach in and on top the tortellini. Distribute them evenly. Slice the tomatoes and put them on top; finally, season it with salt, pepper and basil. Finish it with a layer of cut mozzarella. Bake at 225 ° C for about 15 minutes. Serve with a mixed salad or baguette.
