Stuffed buns with sauerkraut

Ingredients:
  • 750 g fresh sauerkraut
  • 6 shallots
  • 450 g flour
  • 750g diced bacon
  • 750 ml cream
  • 60 g yeast
  • 3 apples
  • 3 eggs
  • Butter to fry oil
  • Sugar, pepper, salt
  • Some flour butter (flour u. Butter mixed in equal parts)

Preparation:

Add 3 pinches of sugar, yeast in 150 ml of water and let it dissolve.

Next, put the eggs and flour in a bowl, mix, then add the dissolved yeast. Mix it all to a smooth dough. Then cover and leave it in a warm place to rest.

In the meantime, peel the apples, remove the core and then cut into small cubes.

Next heat some butter in a pan and fry the finely cut bacon, then add the apple cubes and sauerkraut and simmer for 15 minutes.

After the dough rose, you should have twice as much. Roll it out thinly and divide the dough into equal squares, 12 cm each.

On each square, you put a tablespoon of sauerkraut. Then close it diagonally and tightly close the triangles. Brush a little oil on top, then fry them in a pan with heated oil.

About 3-5 minutes later add 3 cups of hot water to the fried dumplings, cover the pan with a lid and cook for 20 minutes. When the water has evaporated from the pan, you can take the dumplings from the water but put the shallots and the remaining bacon in the pan and fry briefly.

Add some cream and then flour to let it thicken. Season again if necessary.

Serve the dumplings with sauce.
