Potato casserole with cheese

Ingredients:
  • 2.5 kg of potatoes
  • 3 Cauliflower
  • 750 g pork sausage
  • 100 g margarine
  • 120 g flour
  • 1.2 l milk
  • 300 g grated Gouda - cheese
  • 2 tablespoons granulated broth (vegetable broth, bouillon)
  • 3 egg yolks
  • Salt
  • Pepper
  • grated nutmeg
  • 2 bunches parsley

Preparation:

First, peel, wash and quarter the potatoes. Then clean the cauliflower, divide into florets and wash. Next boil for 10 minutes in salted water. Cut sausage into slices and place in a bowl. Then melt the fat in a pan and add the flour. Deglaze with vegetable, water and milk and let it boil for about 15 minutes. Stir constantly. Stir in the grated cheese. Put some sauce in a cup and whisk in the egg yolks. Later this will go into the pot. (This way it prevents the egg yolks from curdling.) Season the sauce with salt, pepper and nutmeg. Don’t let the sauce cook for too long. Put the potato, sausage and cauliflower in layers in a sufficiently large baking dish and pour the béchamel sauce on top. Bake in preheated oven at about 185 ° C for 45 minutes. After baking, chop the parsley and sprinkle over the casserole.
