Paella

Ingredients:
  • 1,500 g mussels
  • 750 grammes of lean pork
  • 6 small smoked Met sausage
  • 6 cloves garlic
  • 3 chickens a 1,000 g
  • 6 onions
  • 3 red peppers
  • 9 tomatoes
  • Salt
  • Pepper
  • some olive oil
  • 12 artichoke hearts
  • 600 g long grain rice
  • 750 ml broth
  • 375 ml white wine
  • 450 g peas (fresh, frozen)
  • 2 tsp saffron
  • 12 scampi
  • Lemons

Preparation:

First, wash the mussels. Then cut the sausage into slices and cut the meat into pieces. Peel the garlic and onion and chop into cubes. Clean, wash and cut the pepper into strips. Peel, remove the core and cut the tomatoes into quarters. Heat oil in a pot. Season the chicken with salt and fry for 10 minutes. Add the pork and cook for another 5 minute. Add onions, garlic, peppers, tomatoes and artichoke hearts, then simmer. Now add mussels and sausage slices and sauté for another 5 minutes. Preheat oven to 180 ° C. In a paella pan, heat some oil. Add the rice and saffron. Glace with broth and white wine. Now put the meat with the vegetables, peas and prawns into a pan and cook it for about 25 minutes. If the liquid is absorbed, season it with salt and pepper and top with lemon slices.
