Slumbering on the bed of leeks perch fillets

Ingredients:
  • 3 kg leeks
  • 6 tablespoons olive oil

For the sauce:

  • 3 dl single cream
  • 540 ml sour creme
  • 3 tablespoons curry yellow

Preparation:

First, preheat the oven to of 200 ° C. In the meantime, wash the leeks and cut into rings. Heat some oil in the frying pan and simmer the leek rings, then season with salt.

Next, rinse the perch fillets with cold water and pat dry with a paper towel. Season a little with salt and curry powder.

Grease a baking dish with butter, then layer the fish and leeks. Make sure the last layer is with the leeks. Now sprinkle with bread crumbs. For the sauce blend all ingredients, and pour it over the fish and leeks baking dish.

Put it all in the oven and bake for about 30 minutes. This soup goes well with boiled potatoes or cooked rice.

Instead of perched fillets, you can also use any other type of fish, e.g.: trout, in this case, you can replace the leeks with spinach leaves.
