Beef Gratin Försterin

Ingredients:
  • 1.8kg beef (lower shell)
  • 90g butter
  • 1.5 tsp sweet paprika
  • 3 large onions
  • 300g bacon
  • 3 cloves garlic
  • 1 cup cream
  • 400g grated Emmental
  • 6 tbsp. chives
  • ¾ litre of broth
  • 1.5kg mushrooms
  • possibly corn starch to bind
  • Pepper
  • Salt

Preparation:

Wash the meat, pat dry and remove all fat. Cut the meat into thin strips and fry in hot fat. Season the meat with pepper and pour ¾ of the broth over it. Simmer at low heat about 20 minutes. Wash mushrooms and cut into slices. Peel and dice the onion. Cut the bacon into cubes; sauté in butter. Crush the garlic to the bacon and onions. Add the mushrooms and season with salt and pepper. Then add the rest of the broth and cook for 15 minutes. Mushrooms admit and season with salt and pepper. The remaining broth Pour and let everything cook over low heat 15 minutes. Add cream and if needed stir in a little cornflour. Mix it with the mushroom mixture and meat, then season again. Place everything in a baking dish and sprinkle with cheese.
