Beef with onion sauce

Ingredients:
  • 4.5 pounds of beef (breast, high rib)
  • 4.5 litres of water
  • Salt
  • 3 bundle of soup vegetables
  • 1.2kg onions
  • 1 pcs. Butter (250g)
  • 6 tablespoons flour
  • 3 tsp mustard
  • 3 egg yolks
  • Sugar
  • 3 tablespoons wine vinegar

Preparation:

Wash the beef and pat dry. Place in a large pot. Clean the soup green and cut into pieces. Put everything in the water add a little salt and cook on low heat for 2 hours. By then the meat will be soft. Peel the onions and chop finely. Melt the butter in a sufficiently large frying pan and fry the onions until soft. Then stir in the flour and fry a little. Add half to two-thirds of the broth. Season with salt, mustard, sugar and vinegar. The sauce should not be creamy but not too thick. Serve with the meat. You want you could make a simple soup from the broth and serve it before the main meal.
