Carrot and orange soup

Ingredients:
  • 2kg carrots
  • 90g butter
  • 450ml orange juice
  • 12 potatoes
  • 3 ¾ litre of broth
  • 3 large onions
  • 12 TL thyme
  • Salt
  • Pepper
  • Creme fraiche Cheese
  • Nutmeg
  • Parsley
  • Sunflower seeds - Optional

Preparation:

Peel the carrots and cut into slices. Melt butter in a large enough pot and sauté the carrots in it. This will take about 10 minutes. Stir occasionally. If the carrots get too dark, the will taste bitter. Wash and potatoes. Then dice them. Peel the onions and dice as well. Add the potatoes and onions to carrots. Deglaze everything with broth and orange juice. Bring it all to the boil and season with thyme, salt and pepper. On low heat and with closed lid cook for 20 minutes. Once the vegetables are cooked, mash everything with a blender and serve on soup plates. If you want you can garnish it with creme fraiche, parsley and sunflower seeds.
