Cheese and mince soup

Ingredients:
  • 750g minced beef
  • 750g minced pork
  • 8 leeks
  • 8 medium onions
  • 2 ¼ litre of broth
  • 450g herb cheese
  • 450g cream cheese
  • Salt
  • Pepper

Preparation:

In a large pot heat up some oil. Fry the mince in it, then remove it from the stove. Fry the pork roll in the same oil. Wash the leek well and cut into slices. Leek always has sand between its leaves, washing it well is important. Peel the onions and cut into half-moons. Add the mince to the pot. Add onions and leeks. Prepare the broth and let it boil for 20 minutes. Stir in the cheese until it has dissolved. Season with salt and pepper. You can serve this with all kinds of bread. If you prefer the soup a little thicker, cut the potatoes smaller and cook them into the soup.
