Chestnut soup

Ingredients:
  • 1kg chestnuts
  • 200g onions (diced)
  • 200g bacon
  • 300g ham (possibly deer ham)
  • 2 litres vegetable stock
  • 2 cups cream
  • Cloves
  • Bay leaves
  • 1 cinnamon stick

Preparation:

Cook the chestnuts for 10 minutes that will make it easier to peel them. Sauté the onions with bacon. Boil the peeled chestnuts for 30 minutes in 1 litre of vegetable broth. Add the cinnamon stick, bay leaves and cloves. Then add the onions and the bacon. After 30 minutes, remove the bay leaves, cloves and cinnamon stick. Then puree the soup. To thicken the soup, add the cream. If that still does not bind the soup enough, prepare a roux and add as well. Just before serving, add a strip cut deer or boar ham to the soup. The ham should be slightly juicy so that the soup gets some flavour.
