Fiery Sauerkraut soup

Ingredients:
  • 3 kg sauerkraut
  • 1500 g peeled canned tomatoes
  • 18 onions
  • 25-30 sausages alternatively can also use ground pork
  • 12 l of broth
  • 6 bunch of parsley
  • 750 g bacon streaky
  • 15 slices white bread
  • oil
  • Pepper, salt, sugar

Preparation:

First separate the sauerkraut to leaves, then peel and cut the onions into large cubes. Cut the bacon into small cubes, press some dumplings from the sausages or make little meatballs from the mince.

Peel the tomatoes then cut them into small cubes and drain. Get a sufficiently large pot or create the soup in two pots. Now heat oil and add the bacon. Then add the meatballs and onions and fry.

Remove the ingredients from the pot, and put the sauerkraut into it instead. Simmer and then add the broth and tomato juice

Boil it for a few minutes, the put back the meatballs, onions and bacon. Season with paprika, salt, pepper and sugar. Put the lid on and cook over medium heat for 25 minutes. Last, add the tomato pieces and garnish the soup with chopped parsley.
