Goulash soup

Ingredients:
  • 3 tablespoons olive oil
  • 3 medium onions
  • 6 cloves of garlic
  • 2 tsp hot paprika
  • 3 tsp paprika
  • 750g diced beef
  • 3 tsp salt
  • 1 teaspoon ground cumin
  • 3 L beef broth
  • 6 medium potatoes
  • 3 peppers (green or colourful)
  • 6 tomatoes
  • 6 cl Port wine
  • 1 cup sour cream or creme fraiche

Preparation:

Peel, dice and then cook potatoes in salted water. Do the same with the onions. Remove the core from the peppers, wash, dice and place in a bowl. Wash, peel and dice the tomatoes. Then put it all aside. If not already done, the beef needs to be diced as well. Heat oil and fry the onions until translucent. Add the beef and fry very quickly. Peel, crush and add the garlic. Season with paprika, cumin and salt. Add half of the broth and bring it to the boil. As soon as the meat is done, add the potatoes and the remaining broth, bring to the boil and cook for 15 minutes. Then add peppers and tomatoes and cook again on low heat for 15 minutes. Season with port wine and salt. Put on each plate a tablespoon of cream, pour the soup on top and serve hot.
