Leek soup with potatoes

Ingredients:
  • 1.500g potatoes
  • 6 leeks
  • 900g carrots
  • 3 medium onions
  • 3 tablespoons lovage, parsley, rosemary, (dried or fresh)
  • Salt
  • Pepper from the grinder
  • Parsley fresh
  • Olive oil
  • 3 litres of broth

Preparation:

Heat a pot of water which is large enough to cook the soup. Then peel, wash and dice potatoes. Clean and wash leeks and cut into thin rings. Peel the onion, wash and chop finely. In the pot heat a little olive oil and fry the onions until soft. Add the potatoes and leeks and stir gently. While the vegetables cook, prepare the broth. This recipe the vegetable stock is suitable this way, it is also suitable as a vegetarian dish. Pour the broth over the veggies and cook 20 to 25 minutes. Meanwhile, peel the carrots; then wash and dice them. With a hand blender puree the soup. You can do that is several smaller portions. Add the carrot cubes to the soup and cook for 10 more minutes.
