Potato soup

Category: Lunch
Sub-Category: Soups
Difficulty/Costs: normal/manageable
Number of people: 12
Ingredients:
  • 15 large potatoes
  • 3 carrots
  • 3 leeks (Allium)
  • 3 medium onions
  • 3 litres vegetable
  • Parsley
  • ground pepper
  • 6 pcs wieners
  • White bread cubes
  • Chives
  • Marjoram
  • nutmeg
  • Laurel

Preparation:

Cut the white bread into cubes and fry quickly. Clean the leek and cut into rings. Then peel the potatoes and chop coarsely with the carrots. Sauté the onions in a little olive oil. Add the leeks. Sauté the leeks and then deglaze with the vegetable broth. Add the potato and carrot cubes, then add the bay leaves and cook it with the rest. Cook the soup until the potatoes and carrots are soft. Then remove the bay leaves and puree the soup, then add the herbs. Cut the sausages into pieces and add 20 minutes before the soup is done so that they too are nicely hot. When the soup is cooked, season with pepper. Put the white bread cubes on the plates just before serving. Use the marjoram generously as this will give the soup its great taste. If you prepare the soup without sausages, it is a great dish for vegetarian and vegans.
