Pumpkin and potato soup

Ingredients:
  • 9 potatoes
  • 3 onions
  • 2 garlic bulbs
  • 600g pumpkin flesh
  • 300g cheese with herbs, sour cream or creme fraiche
  • Salt
  • Pepper
  • 3 litre of broth
  • Possibly some more water

Preparation:

Wash and peel potatoes. Then dice and put aside. Next, peel the onion and garlic and chop as well. Bring a pot with broth to the boil. Put the potatoes, onions and garlic in the broth. Boil and let cook until tender. Approximately 10 minutes before the soup is finished add the chopped pumpkin to the broth. If you notice that the vegetables are cooked, add the cheese. Heat it all up until the cheese is melted. Puree the soup with a hand blender and season with salt, pepper and nutmeg. If the soup is too thick, add a little water. If you prefer a stronger flavour, add mire onions and garlic to the soup.
