Semolina dumpling soup

Ingredients:
  • 900ml milk
  • 75g butter
  • 3 tsp salt
  • 3 pinches of grated nutmeg
  • 300g durum wheat semolina
  • 6 eggs
  • 3 litres of clear broth
  • fresh chives

Preparation:

Put milk, butter, nutmeg and salt into a pot and gently bring to the boil. Next, stir in the semolina until thickened. As soon as that is done, remove from the stove. Depending on the eggs, stir them in either with a whisk or blender. Place a large pot on the stove and bring the broth to a boil. With a teaspoon cut dumplings out of the semolina dough and cook them. On low heat let them cook for 10 minutes. Sprinkle with chives and serve hot. This soup is excellent as a starter for a variety of dishes.
