Vegetable soup

Ingredients:
  • 5 medium potatoes or correspondingly more smaller
  • 5 carrots
  • 5 onions
  • 1 kg white cabbage
  • 1 medium celery root
  • 3 cloves garlic
  • 250 grammes of beans
  • 250 grammes peas
  • 125 grammes pancetta cubes
  • 125 grammes of oil
  • 5 litres of beef broth
  • 125 grammes of rice or Brühreis
  • 2 to 3 bunch of parsley
  • 100 grammes of grated Parmesan cheese
  • Salt, pepper, white lovage (chopped)

Preparation:

First of all, peel the potatoes and onions. Next clean all the other vegetables. Cook the rice. When this is done, cut the potatoes, celery and carrots into strips. The onions and leeks are cut into slices. Next, grate the cabbage and crush the garlic. Next, melt the bacon in a large pan and eventually add the veggies to the bacon. Now add the oil and fill with the broth. Cook by medium heat. Season with salt, pepper and the herbs. Finally, add the pre-cooked rice to the soup and warmed it up. Since not everybody likes Parmesan, it should be served separately. The preparation time for this dish is about 40 minutes. This soup is relatively easy to cook, and no special knowledge is required. It is easy to cook this soup with young people. This soup provides the energy and is healthy and nutritious because of the fresh ingredients. Because the soup is quite simple to prepare, it’s also a great dish for the cooler season.
