Frisian Elderberry soup with semolina dumplings

Ingredients:
  • 3kg elderberries or 0.7Ltr. -juice
  • ¾ litre of apple juice
  • 180g sugar
  • 3 apples
  • 3 cinnamon sticks
  • 3 lemons (juice and zest)
  • 6 tablespoons cornstarch
  • 0.4 litres of milk
  • 3 tablespoons butter
  • A bit of salt
  • 3 eggs
  • 150g semolina

Preparation:

Put the elderberries in hot water and boil for about 20 minutes. Then strain through a sieve. However, if you just use elderberry juice instead, heat up the juice. Then bring the apple-, the lemon- and elderberry juice with the cinnamon to the boil. Sweetened with sugar. Remove the core from the apples and cut into pieces, then cook with the soup. Place a separate pot on the stove. Boil the milk, fat, salt and 1 teaspoon sugar. Stir in the semolina until it lifts off the bottom of the pot. Remove the pan from the heat and quickly stir in an egg. Heat up another pot with water. With a teaspoon cut up little pieces of semolina and put it into the salted water. Mix the starch with water and add it to the soup. Let it set. Add the “semolina balls” just before serving.
