Gnocchi salad

Ingredients:
  • 6 Pack Gnocchi from the refrigerated section
  • 6 small onions
  • 6 peppers (red)
  • 6 green zucchini
  • 12 tablespoons olive oil
  • Freshly ground pepper
  • Salt For the vinaigrette:
  • 6 cloves of garlic
  • 6 tablespoons white wine vinegar
  • 12 tablespoons olive oil
  • 9 tablespoon tomato paste
  • 18 EL vegetable
  • Salt
  • Freshly ground pepper
  • Fresh basil

Preparation:

Cook gnocchi in salted water, drain and rinse. Cut zucchini into slices or cubes. Clean the pepper and cut into pieces. Fry the vegetables with the onion in hot oil, season with pepper and salt. For the vinaigrette puree the garlic, vinegar, oil, tomato paste and broth with a hand blender. Season the sauce with salt and pepper. Mix gnocchi, vegetables and sauce in a large bowl. Wash the fresh basil leaves and shake dry. Cut the leaves into strips and sprinkle over the salad. The salad can be served warm or cold. If you desire some meat as well, simply add some ham.
