Knöpfli and dried beans

Ingredients:
  • For Knöpfli:
  • 6 eggs
  • 600 g flour
  • Water as required

For the dried beans:

  • 6 onions
  • 450 g dried beans
  • 6 tablespoons butter
  • 150g butter

Preparation:

Put the beans in water and let them soak overnight. Chop 3 onions and simmer in butter. Then add 3 cups or the soaked beans. Then drain the rest of the onions and add to the onions. Cover and cook over low temperature for about 1 hour.

In the meantime, blend flour, water and eggs together for the spaetzle. Knead the dough until it makes bubbles. Next get a salad sieve put the dough in and push it into a pot with salted water. Cook until they spaetzle come to the surface. Then take them out.

Now get a deep bowl and layer the spaetzle and beans. Make sure your last layer are spaetzle.

Now chop the remaining 3 onions and fry them in the remaining butter until golden brown. Sprinkle them over the spaetzle and serve hot.
