Puff pastry with feta and spinach filling

Ingredients:
  • 3 pack. Frozen puff pastry
  • 900g spinach
  • 12 tablespoons grated cheddar
  • 450g feta cheese
  • 3 small onions
  • 6 eggs
  • Oil

Preparation:

Take the spinach out of the freezer and defrost it Heat the oil in a large enough saucepan. Peel the onion and dice finely. Add the onions to the oil and fry until soft. Add the spinach and cook while stirring it constantly. If the spinach contains too much water, drain it, so that your filling is not diluted. Then mix the cheese with the 3 eggs and add to the spinach. Roll out the puff pastry and cut into squares. Place the filling in a way, so that you can form triangles.
